Sumac

Sumac is a ground spice that has been using as anti bacterial, coloring and additive for long time. This spice is rich in protein, vitamins specially vitamin C. One of the main health uses of it is helping to reduce the skin inflation and keep it sharp. the anti oxidant compounds in this spice can prevent lung diseases. also it helps to reduce blood pressure and cholesterol.

In ancient Greek and Roman times, it was used to dye wool and tan leather. this spice is usually growth in mountains area and middle east is the heart of producing that. Iran is one the most important countries in producing this spice. Tabriz and East Azerbaijan cities in the north west of Iran are the main land of cultivating that in Iran. The harvesting season for sumac starts from July and end in the middle of August.

Two famous types of sumac is red and brown and the red one is more sour in compare to brown type. It is suggested that using this spice for one or two times in the day is useful for body but it is necessary to note that fresh sumac is not edible and this spice should be dried. It should store in airtight jar and its shelf life is around two years.
