Saffron

The crimson threads of  flower of Crocus sativus is called saffron. It is the most expensive spice in the world. Iran has the highest proportion of saffron market in the World. Iran share market was up to 44 percent in 2020. Qaen city in khorasan province is the heart land of cultivating this spice in Iran. the cultivating season for it starts from November and last for one month.

Iranian saffron is categorized in 4 varieties and their name are Super Negin, Negin, Sargol and pushal. Super Negin has the highest amount of crocin between these categorizes so its red color is more strong in compare to other varieties. crocin is the component that is responsible for coloring in the saffron. on the other hand pushal has less red color.

This spice mainly is used as flavor and additive for food. its color and aroma helps to have better dish. But it has some health benefits too. it is rich in antioxidant. also it is a powerful anti depression. PMS treatment is another use of it. also some researches show that this spice is good for heart health.

this spice should storage in cool and dark condition and it can be used for more than one year.
