Sumac is a spice that is popular in the Middle East. Sumac berries grow on the Rhus Coriaria shrub, which is typically found in high plateau areas of the Mediterranean like Sicily, due to its wild, rocky lands. Sumac also grows in Turkey and can be found in parts of Iran. When the berries are fully ripe, they are harvested, dried, and ground. The processed sumac takes on a dark red color and the texture of ground nuts. It has a similar smell and taste to lemon but is not as sour. Sumac is widely used in Arabic and Lebanese cooking, and similar to salt, it brings out the natural flavors of the foods it is cooked with. this spice has various health benefits such as Provides anti-inflammatory effects, Supports metabolic and cardiovascular health, Contains antimicrobial properties and reduce muscle pain.

As mentioned above this spice is pretty much on the table like salt and pepper in places such as Palestine, Lebanon, Syria, and Turkey. Sprinkled on top, it brightens not only with flavor, but with color, dishes like hummus and baba ganoush. It can be used to marinate meats, and used to add a pop of flavor anywhere you’d add lemon juice.

A couple of classic Middle Eastern dishes involving sumac are fattoush salad, a combination between a lettuce salad and a bread salad with the inclusion of toasted pita bread, and musakhan, a Lebanese stewed chicken dish. But its uses are extremely broad. You can make it into a tea, you can use it in pastry, you can use it in savory. If you toast it, it changes in flavor completely.
